Well we learned a big lesson during our sushi specatular this evening and that is how to make real wasabi. First of all this is what wasabi actually looks like — it does not come in little green clay piles next to your sushi order.
Next surprise was how it’s turned into the wasabi you eat. The sushi chef just takes the root and scrubs it in a circular motion over a board that is covered in shark skin. We got to feel it — it’s extremely rough!
If your favorite sushi restaurant isn’t making it this way you are getting wasabi powder that has been mixed with something else to turn it into the little clay pile. The real stuff is a million times better.
